We love Mexican food, fresh mex, taco time, whatever you’d like to call it. If it’s even close to Mexican or has green chiles in it, we love it!
This recipe is so yummy! It’s a little time consuming but super delicious. Make it, you won’t be sorry!!
Grilled Chicken Taco Salad with grilled corn and black bean salsa.
4 chicken breasts
1 packet chicken taco seasoning
1 lime ( juiced)
1 Tbsp vegetable oil
Mix together in a gallon ziplock bag and marinate for an hour or overnight.
Black bean and corn salsa
3- 4 ears of corn (shucked and sprinkled with salt and pepper and grilled)
1 (15 ounce) can of black beans, rinsed and drained
1 (15 ounce) can of Rotel tomatoes
1 can of green chiles
1/4 cup cilantro
1/2 cup finely chopped purple onion
1/2 tsp cumin
2 Tbsp olive oil
Salt and pepper to taste
Mix togther and chill for an hour
I head of romaine
Grill chicken, and slice up. Crush up some tortilla chips. Chop up the lettuce and place on top of chips along with chicken, salsa, and drizzle with ranch. DELICIOUS!
