Hard boiled eggs are one of my all time favorites. They can be a meal, or just a snack. They’re full of protein and good fats too.

I keep them readily available in my fridge for meal prepping and snacks.

They are a great source of protein, and make every salad better.

However if you don’t have a tried and true method for cooking them, they’re kind of a pain peel! I use my grandma’s method, it’s never failed me!

I always start with the eggs at room temperature. I’m my opinion fresh eggs are the best, but this works just as well with week old eggs too. Get a pan and add the water. Bring to a rolling boil, and carefully add the eggs.

I think that the hot start is part of the trick to getting them to peel easier, and cook more evenly. Once the eggs are added, cover the pot and turn the heat to a slow simmer. Then cook for 12 minutes.

When your 12 minutes is up, I carefully add them to an ice bath. Let them sit til they are fully cooled. Then they’re ready to peel! Couple taps on the top and bottom and a roll across the counter and the shell comes right off!

Now they’re ready to enjoy any way you’d like. I store peeled eggs in the fridge for a week. (They rarely last a few days though)
